onward

As you probably saw in our other notes, this will be the last beer that I'm making for a while. I'm moving on to some different challenges after so many exciting years here.

But when you move on, you always keep a piece of the experiences you had with you. You always keep a piece of everything that was there with you. These pieces become a part of us.

So, for this beer, I wanted to keep a piece of the past, and I wanted to show a nod towards the future. I used Mosaic and Citra hops, two classic hops that I've used for a long time here, but I added Strata and Galaxy, two more modern hops. I kept a classic mouthfeel. I kept a little bit of the bitterness of an old-school IPA, but I kept some of the fruitiness of the modern, juicier IPAs.

I'm moving onward, but I'm not moving away. There will always be a piece of Open Air Brewing inside of me, just like this beer has a piece of what made IPA so great. It keeps a part of the past while giving a nod toward the future.
